Berry Lollipops
FAST
MAKE-AHEAD
MAKES ABOUT 2 DOZEN LOLLIPOPS
Lollipop sticks are sold at supermarkets and at baking supply shops. If unavailable, substitute wooden skewers; cut off the tips before using. You will need a candy thermometer to make this recipe.
ingredients
- Vegetable oil, for brushing
- 1 cup sugar
- 1/2 cup water
- 1/3 cup light corn syrup
- 1/4 cup cranraspberry concentrate
- 4 drops red food coloring
- Twenty-four 6-inch lollipop sticks
directions
- Brush 2 flat baking sheets with oil. Fill a pie plate with 1 inch of cold water.
- In a small, heavy saucepan, combine the sugar, water and corn syrup and bring to a boil, stirring just until the sugar dissolves. Boil over high heat, without stirring, until the syrup reaches 280° on a candy thermometer, about 20 minutes. Add the cranraspberry concentrate and food coloring and cook over moderately high heat until the syrup reaches 300°. Briefly dip the saucepan in the cold water to stop the cooking.
- Once the bubbling subsides, carefully spoon 6 scant tablespoons of syrup about 2 inches apart on 1 of the prepared baking sheets. Working quickly, place a stick in each of the lollipops, turning it to cover with syrup. Continue to form the lollipops, 6 at a time, until both baking sheets are full. If the syrup in the saucepan becomes too thick, melt it over low heat. Let the lollipops harden, then wrap in plastic.
MAKE AHEAD The wrapped lollipops can be stored flat in an airtight container in a cool, dry place for 1 month.
NOTES
Variation
To make citrus lollipops, replace the cranraspberry concentrate and red food coloring with the juice and zest of 1 lemon or lime and 4 drops of green food coloring. Stir in the zest just before spooning out the lollipops

Happy Face Lollipops
by the Editors of Easy Home Cooking Magazine

Happy Face Lollipops
Yield: Makes about 2 dozen lollipops
Ingredients:
24
popsicle sticks or small wooden skewers (4 to 5 inches long)
2
cups sugar
1
cup water
2/3
cup light corn syrup
10
to 12 drops green food coloring
Red cinnamon candies and/or other decors
Preparation:
1.
Line 2 large baking sheets with foil. Place popsicle sticks about 4 inches apart on foil.
2.
Combine sugar, water and syrup in heavy 2- or 2-1/2-quart saucepan. Bring to a boil over medium-high heat, stirring frequently. Attach candy thermometer to side of pan, making sure bulb is submerged in sugar mixture but not touching bottom of pan. Continue boiling, without stirring, about 10 minutes or until mixture reaches hard-crack stage (300° to 305°F) on candy thermometer. (Watch carefully so that mixture does not burn.) Remove from heat.
3.
When mixture stops bubbling, stir in food coloring, a few drops at a time, until desired color is obtained. Let stand 2 to 3 minutes or until mixture is slightly thickened and cools to 200° to 205°F on candy thermometer.
4.
Quickly drop sugar mixture by tablespoonfuls over popsicle sticks forming 3-inch lollipops. To make happy faces, immediately place red candies onto lollipops for “eyes” and “mouths.” (Be careful because candy is very hot.) Use other decors to make “hair,” if desired.
5.
Cool completely, about 10 minutes. Peel off of foil. Store in resealable food storage bags at room temperature.

Lollipops |
There’s no trick to molding candy on a stick! Most Wilton candy molds are made with indentations to fit our lollipop sticks, so it’s easy to make and give these great candy treats. Lollipops are fun to decorate for the occasion, with simple ribbon and wraps.
1. Pour melted candy into lollipop mold. Tap mold to remove air bubbles. (If you are painting colors, click here for instructions.)

2. Position sticks in mold. Rotate sticks to thoroughly cover with candy so that they remain securely in place.

3. Refrigerate until firm, remove lollipops by raising the stick and lifting candy out of mold.

Painting Details |
Adding color details to candies makes them more realistic and much more fun! For large areas of color, it’s best to paint the melted candy right in the mold before the whole candy is molded using a decorator brush. Or, for very small details like vines, mouths and messages, melted candy should be piped onto molded candies using a parchment bag with a small hole cut in the tip.
1. Melt desired Candy Melts® colors in the microwave, using the Candy Melting Plate. With decorator brush, paint areas of candy molds with melted candy.

2. Refrigerate mold a few seconds until candy is firm, repeating for each additional color.

3. Fill mold to top with melted candy, tap, refrigerate until firm and unmold. For best results, always fill in one section of the mold at a time and let set before adding additional colors.

Piping Details
Piping is the way you can add designs or details by controlled squeezing of melted candy, icing, etc., from a decorating bag. Just squeeze from the bag onto your molded candy. It’s easy to add hair, facial features, clothes or other designs to candy. When using parchment bags: Follow Parchment Triangles package instructions to prepare one bag for each color. Melt the candy separately before placing in parchment bags, then spoon it into bags. Using scissors, cut a small opening in tip and squeeze candy on molded candy. You can also reheat candy if it hardens in the bag by placing the bag back in the microwave or on a warming tray.
